Carlos Moro Bodegas & Vinedos is a boutique Spanish wine. What I learnt is that Carlos Moro had recently won and outstanding award from King of Spain for its longstanding commitment to innovation in the wine sector, in particular in respect of the environment, sustainability and using R&D&I to boost competitiveness. This wine tasting took place at Chinoz on the Park at KLCC.
Got the privillage to sample this unique boutique wine all the way from Spain as this had only recently penetrate into Malaysian market.
For Casual chat session, we started off with Verdejo 2015, Fermentado en Barrica – Finca Las Marcas. A very simple frutity wine that brings you slight finishing to begin with. Love the nice lingering after mild fruit taste.
Got presented by the man of honour himself Carlos Moro whom is the founder of this winery. With his pure passion and dedication towards this industry, he had made a mark not only in his country but now growing to internationally.
Love the fresh bread prepared by Chinoz
Foie Gras Espuma, Hokkaido Scallop, Avruga pair with Carlos Moro Finca LAs Marcas Verdejo 2015 Rueda. Love the way how the restaurant prepare this pairing as indeed it is a perfect combination. The dish is light, fragrant as the white CM Rioja do opens up the flavour to be more mild, with a hint of sweet end and nice after taste of aroma.
Next is this Carlos Moro Prestigio D.o.Ca Rioja. For a bottle year 2015, this is simply amazing. Young wine yet give you a strong intense flavour, colour of wine is slightly dark cherry with slightly complex character.
Squid Ink Rice with Pistachio Praline, Marinated Anchovies & Romesco pair with CM by Carlos Moro Tempranillo 2015, Rioja
Duck Breast with Spied Mandarin Jus Mocha Crumbs & Red Wine Pear , pair with CM Prestigio by Carlos Moro Tempranillo 2015, Rioja Matarromera Crianza Tempranillo 2012, Ribera Del Duero 2012
Toro Carlos Moro Finca Valdehierro Tempranillo 2014, Cigales
Among the two reds of year 2014, I certainly prefer this bottle Carlos Moro Finca Valmediano Tinta de Toro 2014. I am a dry wine lover and for a wine of 2014 that need to be breath at least 2 hours before serving (which is preferable) to open up its aroma is certainly a good one.
As this bottle of wine aged in French Oak Barrel for 16 months, the taste of it is certainly a punch in your tongue. You will certainly taste its aging taste, fragrant of french oak wood, spices and a very persistent long dry finish.
2012 Very dry and harsh winter, with a prolonged drought lasting through to the first half of spring. Very rainy April, which benefited a slightly late budding owing to the conditions during winter. Very hot summer marked by extreme drought. Largely rain-free harvest although with a short and welcome spell of rain at the end of September.
The vineyard Poor sandy soils. Centennial rootstock Tinta de Toro plantation. Density: 1,100 plants per hectare, planted in 1930. Maximum load of 3,000 kg. per hectare. Located in the Duero River, in Toro, in an area with Mediterranean climate with continental influences and an altitude of 650 m above sea level.
The wine Intense purple tones, with soft cardinal edging, covered layer, clean and bright. Very intense and complex, with bright aromas of ripe black fruit; Acid blackberry and blueberry jam with balsamic elegant lavender, balanced with tertiary aromas from the barrel aging, highlighting spicy clove and black pepper, fine chocolate, roasted and licorice stick. Live sweet tannins skeleton, balanced with elegant alcoholic warmth. Remain the same aromas existing on the nose, repeating an excellent complex with harmonious, persistent, warm and silky long finish.
Loin of LAmb with Merguez Carpaccio Mint-Pea Puree, Jerusalem Artichoke Croquettes & Port Wine Jus. The pairing with the lamb is certainly a challenge as both are heavy taste as when this two is being crossed, never thought that they compliment each other as the strong wine pulls up the flavour of lamb that make it aromatic and fresh along with the arthicoke of mild sourish, enhance the flavor of this strong wine that give you a better aroma of mild spices. Just amazing for this combination.
